I love soup. This recipe makes it to our rotation at least once a week. Super-fast, semi-healthy, cheap comfort food
4 c chicken stock
1/2 lb pasta (we find that whole wheat noodles work well)
Veggies that you have lying around (frozen carrots and peas work well)

Heat chicken stock and an equal amount of water to boil in 4 qt pot. Add eggs and dumplings. When the eggs are solid and dumplings float, add the pasta, salt and pepper. Cook for 4-6 minutes more. Add veggies. When veggies are cooked thru serve, with a squirt of hoisin and rice vinegar in the bottom of each bowl. nomnomnom
Note: this recipe works well without dumplings.
